What religious order of Catholic priests came to New France in the 1600's and why did they come? - french catholic order of service wedding
I think that the Order is the order of the French Jesuits, but I'm not sure if I do not know why they came.

It was not necessary for them to avoid prosecution. Spain was Catholic at the time. It began in France, where St. Ignatius of Loyola was at the time. Finally, the Jesuits, a kind of religious thought was superior organization that is dedicated to the study and interpretation of some of the most complex issues of religion.
This is, of course, anti-clamactic much when compared to popular myth, that was the Jesuit order founded to overthrow the corrupt French King Louis.
